Ingredients
- 1 cup water
- 1 cup milk
- 2 tsp strong CTC tea leaves
- 1 inch ginger, crushed
- 2 green cardamom pods, crushed
- 2 black peppercorns, crushed (optional)
- 2-3 tsp jaggery powder, to taste
Method
- Boil the water with ginger, cardamom and pepper for 2 minutes until it smells strongly of ginger.
- Add the tea leaves and boil for another minute.
- Pour in the milk and bring to a rolling boil, then simmer for 2 minutes.
- Turn off the heat and let the chai stop bubbling for about 30 seconds.
- Stir in the jaggery powder until dissolved, strain into cups and serve hot.
Yogsutra tip: Always add jaggery after turning off the heat. Stirring it into boiling milk can make the chai split.
